Some Alaskans aren’t even halfway through their fish supply from this summer’s catch. That surplus of salmon can make it hard to come up with new meal ideas, says Anchorage writer Julia O’Malley.
This week, O’Malley adds a dose of inspiration to our Recipe Box, courtesy of her cousin, Tanya.
“She fishes the Copper River and she had an entire giant freezer full of salmon,” said O’Malley. “And she just came up with this recipe on the spot, and it was a huge hit.”
This easy-bake salmon calls for breading with crushed saltine crackers, a task guaranteed to entertain the kiddos.
