While the Lower 48 is gearing up for spring, Anchorage just recorded the coldest March morning since 1999.
Needless to say, it’s still soup season in Alaska, notes Michelle Baxter. In this week’s Recipe Box, she whips up her version of salmon chowder, a hearty soup full of vegetables and protein.
This isn’t the first time the local blogger has shared a soup recipe. In October, when the temperatures began to drop, she and her toddler, Cullen, made a bacon, kale and potato soup. Baxter says soups and chowders are often her go-to because of their simplicity.
“I mean, there’s some chopping of the vegetables, but it’s like a one-pot meal,” Baxter said. “And so you can throw everything in the pot, and then 20, 30 minutes it’s done and ready to be served.”
She says not only is this soup another way to use that salmon sitting in the freezer, but it’s something to warm the soul.
