Accepting an invitation to someone else’s house for Thanksgiving is a way to keep things stress-free this week. That is, until you have to figure out what dish to bring, since proper etiquette calls for guests to never show up empty-handed.
That’s where Daybreak’s Recipe Box comes in! Amanda Cash, mom and owner of The Magpie food truck, shares a recipe that keeps your contribution to Turkey Day simple — “perfect” mashed potatoes and gravy.
Cash notes Alaska has plenty of potatoes to offer — russet, Yukon gold, Magic Molly — but for this dish, she uses a starchy Viking selection. Instead of old-fashioned mashing, her weapon of choice is a ricer, which presses the potatoes through like Play-Doh. To pair with the “perfect” potatoes, Cash makes a vegetarian gravy that’s just as rich as the meaty version.
The result? A side dish so good Cash promises your hosts will be thankful they invited you to the Turkey Day feast.
