Recipe Box: Eggnog Monte Cristos

Don’t let those holiday leftovers go to waste! We’re putting them to good use in this week’s Recipe Box.

Amanda Cash, Anchorage mom and owner of The Magpie food truck, shows us how to make Eggnog Monte Cristos. It’s a triple-decker sandwich that you can fill with those holiday meats sitting in the fridge.

“A lot of us might have leftover eggnog and maybe some leftover ham from Christmas dinner,” said Cash. “So this is going to combine the two and make a really nice sandwich that’s quick and easy for a weeknight meal.”

The Monte Cristos are hand-pressed and refrigerated before they’re washed with eggnog in preparation for the grill.

In true Magpie fashion, Cash makes her own eggnog from scratch (alcohol optional!) and double washes the Monte Cristos in the holiday beverage.

“I put a second layer of eggnog on for more flavor,” she explained. “And when that cooks, it gets really nice and crispy on the outside instead of soggy.”
