In this week’s Recipe Box, we’re breaking out the Crock-Pot and embracing the ease of a slow-cooked meal. It’s a tool Kristen Williams suggests busy parents keep in their arsenal.
Williams, a YouTube vlogger based in Eagle River, is a new mom. Her infant daughter, Chell, is by her side nearly 24 hours a day, which is where slow-cooking a meal comes in handy.
“With a 6-month-old, I don’t have time to stand over a stove for, like, an hour in the evening and make dinner,” she said. “So a Crock-Pot’s nice because you can put everything in it, leave it and it’s good to go.”
One of her favorite throw-together recipes is a cheesy tater tot bake with chicken and bacon. It only takes a few ingredients, most of which parents probably already have at home, and it requires little to no prep time, Williams says.
The cheesy tater tot bake only takes three hours to slow cook to perfection, and Williams suggests serving it with salsa.
