Chicken and waffles is a soul food staple known for its combination of contrasting flavors: sweet waffle batter and sticky maple syrup combined with salty breaded chicken, fried (or baked) to perfection.
But Derrick Green, co-owner of Waffles and Whatnot food truck, has reimagined the recipe by adding a double dose of savor. The waffle takes the flavor of an Italian-herb buttermilk biscuit.
“One of the things that I find going around Anchorage is people are a little skittish about trying it because they think it’s a sweet waffle,” says Green of his recipe. “So I let them taste the [waffle], and they get to see that it’s actually an Italian biscuit. It’s no different than eating your breadsticks when you’re eating Alfredo or something like that.”
Instead of syrup, Green tops the dish with sauteed onions, ranch dressing and hot sauce. The crispy panko chicken cutlet is placed between the two waffles sandwich-style, resulting in what Green calls layers upon layers of flavor.
